Sophia’s yummy soup is just the thing for a cold winter's evening. It’s a snap to make, nutritious, and really good.

Sophia's Red Lentil & Potato Soup

2 medium carrots, diced

¾ cup chopped onion

organic Yukon gold potatoes, 1 ½ cups diced

1 cup red lentils

3 cups water

2 bay leaves

salt and pepper to taste

2-3 Tbsp. oil (sunflower or olive)

2 cloves garlic chopped (optional)

Sauté carrots, onion, bay leaves, garlic, and potato in oil until onions are translucent and potatoes are nearly soft. Add water, lentils, salt and pepper. Cook until lentils no longer hold their shape (about half an hour). The soup should be thick and stew-like. Add more water if needed.

Serves 4.
