Carl's Spinach: Greens with a Twist


A great way to get some iron into your system and a pleasing accompaniment to any meal.

2 bunches fresh spinach

1 cup pine nuts

1 cup currants or raisins

3 Tbsp. olive oil

Thoroughly wash spinach. Heat olive oil in pan. Sauté spinach, pinenuts, and raisins together. A delicious mix of flavors in minutes. Enjoy!
