Preheat oven to 450 degrees. Caut cauliflower into florets and place in a bowl. Add the sesame seeds and sea salt. Mix. Grease a sheet pan with some of the butter or oil, then melt the remaining amount and add to the bowl of cauliflower, mixing to coat evenly.
Transfer the cauliflower to the sheet pan; bake for 20-25 minutes. Stir several times while baking.
When most of the cauliflower has turned golden brown, remove from the oven, mix in the sliced nori, and place back in the oven for two more minutes to soften.
Makes 2-4 servings.
