Some of us avoid potatoes because it is a nightshade, which may cause joint pain and inflammation. Pia's Cauliflower Mash is a sure hit that makes you forget that you don't have potatoes. Plus it is easy to make!
Pia's Cauliflower Mash
1 head of organic cauliflower
¼ cup of olive oil
salt and pepper to taste
several tablespoons of boiling water
Cut cauliflower into florets. Wash. Steam until done. Remove from heat and place in a Vitamix, blender, or mixing bowl. Add the olive oil, salt, pepper, and enough water to blend. (You may have to experiment with these amounts, depending upon the amount of cauliflower and the type of mixer you use.) Blend until creamy and serve while hot.
