Getting Enough Protein?

Today Cullen shares his recipe for the most protein packed food on Earth! His nut loaf with gravy combines three major sources of protein in a delicious recipe suitable for holiday feasts or everyday meals.

Cullen's Nut Loaf

(makes 2 loaves--one for now and one to freeze for later)

3 ½ cups cooked brown rice

2 cup finely chopped walnuts

1 cup finely chopped sunflower seeds

1 ½ large onion, finely chopped

5 cups shredded cheddar cheese

1 teaspoon salt

1 teaspoon pepper

8 eggs, lightly beaten

Preheat oven to 350 degrees. Oil two 9 inch loaf pans. Combine all ingredients and pack into the oiled loaf pan. Be sure to mix with your hands or with a spoon to retain the interesting texture. (Do not blend.) Bake for about 50 minutes until firm (sometimes slightly longer) and well browned on top. Let cool in pan for 10 minutes; remove from pan and slice.

Cullen's Cashew Gravy

1 cup finely ground cashews

2 tablespoons arrowroot flour

¼ cup finely chopped onion

Salt & Pepper to taste

touch of dried thyme (to taste)

2-3 tablespoons of sunflower oil

Water

Brown flour and cashews in dry skillet.

Remove from skillet.

Heat oil in skillet. Add onion and cook just until golden. Add flour and cashews. Pour in cold water and stir, repeatedly, until the consistency is right. Add salt, pepper, and thyme. Cook slowly, patiently, and with love, constantly stirring and adding cold water for about 15-20 minutes.
